Hike With Cindy


Yay!
A hike day with my dear friend, Cindy, who had the day off work.


I finally learned from her how creosote looks!
(She's really good with Arizona plants and I'm better with birds, though not great yet.)


Creosote has a lovely fresh deserty smell.

It was a beautiful day, even though it was still on the warm side. 
One of these days, it will actually be chilly ALL DAY LONG, but
that day is not yet.




This sign is a bit worn.

Cindy wore a really cute hiking outfit:
jeans, striped t-shirt with matching bright pink details.


Do you see the rock balanced on the other rock?
It's weird that sometimes that happens!

When we got to the top, we had a snack and enjoyed the view:


Here are some hieroglyphs
(symbols drawn on the rocks):


The moon is usually visible from inside the canyon.





If you look closely, you can see some more rock drawings.
You can also see the black on the rocks, and that is called "desert varnish."
This means water has been there regularly and has evaporated regularly!


I felt happy.

Cindy isn't the biggest fan of heights or being close to edges,
so this is a photo of a very brave woman!





After that, she went down and I went up.
Can you see her standing down there near the middle of the photo?

And then we headed down again to go to a late lunch!


This little cholla ("choy-uh") is celebrating FALL
by dropping a bunch of babies!!!




(Of course, that's not how chollas work . . . these babies have 
dropped over a loooong period of time and are the cactus's way of reproducing.
It has nothing to do with the fall season.  We just thought it was funny!)


We went to Joe's Farm Grill for lunch and there was a line out the door!
I've only ever been there on off-times when the line wasn't very long (it's almost never NOT busy!) 


I got a huge basket of fries and the farm veggie salad with citrus vinaigrette dressing.
YUM!
Now I'm really hungry again even though I just finished eating.

Many of the veggies are grown in the farm right behind the restaurant!

The design of the building is really cool, too.  It just reopened after a revamp,
and it's even more beautiful and stylish now than it was before.


In spite of being in the Arizona desert, it feels very GREEN and cool and airy inside
thanks to the surrounding trees and all the gigantic windows.


After the revamp, there's even more seating outside amongst the trees and foliage.




There are cartoons playing in the bathroom!


And there are dolls in lit cases!
I wonder if they are toys that belonged to Joe and his siblings when they were children?

Clean Closet & Open Windows

I got a sudden and powerful NEED to tidy my closet and get it ready for the next season.


I pretty much wear mostly the same things in different ways through all of our desert seasons
(HOT, less hot, and slightly chilly), but it's nice to re-arrange things sometimes.
Also, I try to wear all my things regularly, and if I notice that I'm not wearing something,
I hang it in a different part of the closet.
After a while, things build up and I take them to the consignment store.
I took a bunch of stuff there yesterday.

Looks all pretty now!


During a Target trip, I happened upon this lovely starry top
with a ruffle that has a lace trim!  
LOVE it.
I'm wearing it right now.

Here's another outfit I wore recently - with another top from Target!
Target is really pushing all my buttons in a good way this fall.
I LOVE all the ruffles!  And the colors are really really good.
This is a sweater with a v-shaped ruffle, as you can see.
It's very soft and light, perfect for Arizona winters.

Greg and I have been watching the second season of "Stranger Things"
in the evenings, and the cats know what's coming when we turn on the TV . . . 
they get situated on the couch to wait for us.


Here's one of my other favorite ways to relax:
sit on the couch with all the windows open, reading a book
with a cat or two and watching the beautiful leaves wave on the elm trees
in the backyard.

The cats of course have been endearing, as always!

Claude gave me a HUGE yawn the other morning as they were waking up.
She looks terrifyingly fierce, doesn't she? 


The boys (Allistair & Stephen) enjoy looking out the front
window in my office while I'm working.

Open windows are always nice!


The other day while I was in the shower, the boys thoughtfully unmade the bed for me.
(My guess is Allistair was chilly and wanted covers over him.
Both of them like to be under a tent made of a blanket when it's even slightly breezy or cold.
They are certainly Arizona desert kitties.


I made a couple of good meals lately.
This one was a vegan sushi bowl.
On the bottom is brown rice mixed with some vinegar and nori (dried, crunched-up seaweed)
to make it slightly salty and tasty.  On top I put sweet potato, avocado, shredded carrots, shredded cabbage, pineapple chunks, and sliced water chestnuts.
Yum!



I recently also made this recipe for the first time and will definitely be making it again!
It's mushroom bourguinon and it was delicious.


I had it on top of vegan mashed potatoes
with a big salad and hibiscus tea.
It's one of my favorite meals now!


It reminded me of the meal I always used to request for my birthday meal when I lived with my family of origin: saucy steak dinner.
It's the sauce that makes the dish, as far as I'm concerned, and this had flavor.
The mushrooms gave it a nice hearty texture.

Now I'm getting really hungry - good thing it's dinner time!

Happy World Vegan Day!


I'm not the most experienced vegan on the planet,
but I thought I would take time today to share three reasons I am vegan.

1.  my health

If you've been reading my blog for awhile or if you know me in person, you know that I'm not the healthiest person around, but I try harder than almost anyone I know!  

I am very proactive about my life in general,
and after I read the studies (great summaries of nutrition studies here), 
I couldn't eat the same way anymore as I used to.  
Learning that nutrition changes which genes get expressed and which genes don't get expressed was a life-changing idea for me (check out more information on this new science of epigenetics here).
This means that environment (NUTRITION and lifestyle) 
are much more important than we ever thought.

Yes, I have some genetic weaknesses, and I experienced some insults to my health early on.
HOWEVER, I can make a big big difference in how these play out through how I choose to live,
and the new science shows that I can actually turn off certain genes.
Why shouldn't I be able to get well?
Why shouldn't I be able to support my body in a way that enables it to recover from vulnerabilities and insults from my genetic make-up?

I decided it's worth a try!

My health is what led me to choose to eat only plants.

2.  animals





















This mindset didn't come to me right away.
When I stopped eating animals, I slowly came to believe
that ALL sentient creatures deserve to live.
They do not deserve to die so that I can eat them or drink their secretions.
They are individuals with personalities, preferences, and ideas about how they would like to lead their lives.  I believe they were created to display God's glory, to show His character (and humor!), and to bring us joy, not to be killed and eaten.

I do not want to take part in violence of any kind,
and I choose to do my best to avoid causing suffering to any living creature.

Learning led me to realize that God's original plan was for His people to eat plants, not animals
(see Genesis 1:29).  
We are meant to bring the Kingdom of God to this earth as much as possible RIGHT NOW, and that includes spreading love and peace around as Jesus did when He was on earth.
Killing and causing suffering are NOT loving or peaceful,
and they were not part of God's original plan.
In His final New Kingdom, we will not be eating animals and they will not be eating each other.
Let's make that happen now!
Your Kingdom come, Lord, now on earth as it already is in heaven!

You may think that farming practices are kind and that animals are well-treated.
If you think that, you are wrong.

We have caused BILLIONS of beautifully thought-out and designed creatures to be born - 
only to live lives of misery, pain, fear, and suffering, then to die in horrific ways so we can eat them.
We can't give back life to the animals we harmed and killed, but we can prevent future suffering.

3.  the earth









We are ruining the beautiful planet God created for us.
We are close to having fished out the oceans.
We have polluted our waters with animal waste, toxins, and garbage.
We have cut down irreplaceable forests that protected our precious soil, animal life, and plants.

Our job was to care for this earth, and we have failed.  
It's long past time for us to confess and choose compassion instead of violence.

Our earth is beautifully balanced and designed by God, and if we STOP the destruction, 
it typically returns to a healthy state.  

Let's start that now!



All the reasons I am vegan fall into those three categories.
I hope this post was helpful to you as you hear about World Vegan Day and wonder why anyone would move away from a standard diet heavy on the animals (in more ways than one!)
I did it over two years ago and do not regret it for one moment!
